Summer is the one season where I feel the weekly urge to have dessert. Seriously, I pass an ice cream shop and my hatred of animal by-products suddenly disappears and I’m all, Could I have a hard scoop of Peanut Butter Swirl on a waffle cone? But even ice cream can get tiresome at times, and therefore I seek healthier alternative desserts. You too? Then see the recipe below.

Berries & Cream A La Fancy Ingredients

4 Waffle Bowls

1 Container of Silken tofu

4 heaping tablespoons of Psyllium husk

1/4 cup of agave or honey

1/2 lemon wedge

1 Scoop of vanilla protein powder

1 cup of mixed berries

1 sliced up kiwi

Directions

1. Take tofu, psyllium, protein powder, and honey in blender or a electric mixing bowl.

2. Squeeze in juice from lemon.

3. Blend or mix until it becomes thick.

4. Divide cream into bowls and top with berries and sliced kiwi.

If the cream is not sweet enough add additional honey. The cream should be the consistency of pudding. If it’s still too liquidy add another tablespoon of psyllium. Psyllium is an insoluble fiber and an excellent thickening agent!! This dessert is healthy enough to also have at breakfast-just nix the waffle bowl;)

Strawberries, with cheesecake (vegan) on the side recipe

-One container of vegan cream cheese

-3/4 cup of vegan sour cream

- bag of powdered sugar *yes, this isn’t healthy, but it’s cheesecake for crying out loud!*

- Strawberries

-Crushed gram crackers

Directions


-Mix cream cheese and sour cream in a bowl, and add in powdered sugar to taste. I would start with 1/2 cup and see how sweet that is. If you want it sweeter add a little more.

-Clean berries, and cut off the top and scoop out middle with a small knife.

-Fill center of berries with cheesecake filling.

-Top with crushed gram crackers.

Um, lemon creme, of course!!! It’s under 200 calories, high in protein, and can be eaten as a dessert or breakfast food.

I love ice cream. This love proposed a real problem for me when I began to embrace a vegan diet. Thank goodness for all the delicious non-dairy options being sold in health food stores and super markets today. I’m no foodie by any means, but I appreciate something that taste good, and I assure you, these non-dairy ice cream brands i’m about to show you are just that- crazy good.

The Turtle Mountain company, responsible for the So Delicious brand (which I adore because they make coconut milk that’s yummy and low calorie, as well as yummy non-dairy ice creams), are also the creators of the Purely Decadent line. They make a cookie dough flavor, which is gluten free, perfect for people with gluten/wheat intolerances, such as myself. They also have flavors like:
Mocha Almond Fudge
Peanut Butter Zig Zag
Pomegranate Chip
Praline Pecan
Purely Vanilla
Rocky Road
Snickerdoodle NEW!
So Very Strawberry
Turtle Trails
and so much, I mean so much more! My personal favorite is the Peanut Butter Zig Zag. It is truly made for the peanut butter lover in your life! Needless to say, Purely Decadent is the Ben and Jerry’s of non-dairy ice creams. I love them and think you will too!


Larry & Luna’s Coconut Bliss is another brand to know and love. If you’re in to super creamy, super rich ice cream (I’m talking to all you Hershey’s and Haagen Daz fanatics), Coconut Bliss is for you. Don’t let the organic ingredients fool you- this is the most satisfying “junk” food you can get, that is still healthy. I’ve made my fair share of non-dairy milk shakes with it. I love their vanilla flavor, but my absolute fav is the Cherry Amaretto. If you like Cherry Garcia or Cherry Jubilee, try this flavor. Your taste buds will sing and dance.

Last, but certainly not least is my newest obsession, raw agave gelato, made by Organic Nectars. Made with cashews and agave nectar, gelato doesn’t get any more rich or healthy, all the while staying relatively low calorie. It isn’t cheap. I have to shell out about $7 for a pint, but it’s totally worth it. When I am trying to eat completely raw, I buy this stuff. It’s a real treat. They make lots of different flavors, but my favorite it the mint chocolate chip. I use a scoop of that, a little chocolate hemp powder, peppermint extract and either coconut milk(the kind So Delicious makes) or water (even sometimes blueberries). It makes one super duper fiber infused, protein packed, low calorie, high in taste shake!
