Last month I was contacted by Tribesport to do a guest post. Of course I wrote about the power of the smoothie!! Please check it out! Like it, tweet it, comment, etc. Tribesport is an awesome website that runs fitness challenges and helps fitblrs-like us-keep pushing ourselves.

Chick pea, strawberry and haloumi salad
I think this salad is the closest one I know to having the right balance of macro-nutrients - plus it’s delicious!
Ingredients
- 250g punnet of strawberries
- 1/2 bunch mint
- 90g (1/2 block) haloumi
- 2 small 125g cans of chick peas
- Baby spinach leaves
- 1/2 avocado
- 1/4 lemon
Combine the spinach, mint, strawberries and chick peas. Lay the sliced avocado over the top. Quickly cook the haloumi on a pan over low-medium heat until soft and golden (approximately 2 minutes). Slice the haloumi while it’s still warm and place it on top of the salad. Squeeze lemon juice over the haloumi and avocado and serve. This will be substantial enough for a meal for two.
I also really enjoy this without the haloumi and avocado. The strawberries, chick peas, mint and spinach are just such a winning combo.

Riia’s Vegan Banana Nut Muffins
*Altered from this recipeIngredients:
3 Ripe Bananas (mashed)
3 tbsp Olive Oil
2 cups flour (aim for healthier flours…no white flours!)
3/4 cup Sugar (or applesauce as a substitute)
1 tsp Baking Soda
1 tsp Vanilla Extract
3 tsp Cinnamon (or desired amount)
1/2 cup Walnuts (optional)How to:
Preheat oven to 350. Mix mashed bananas with olive oil. Add in flour, sugar, baking soda,vanilla extract and cinnamon. Blend using an electric mixer until smooth texture. Stir in walnuts.
Pour batter into desired pan. I chose a cupcake tray because it makes portion control easier!
Cook for about 30-60 minutes, depending on pan size! Enjoy :)Oh my god MUST TRY ASAP

Oat & Chocolate Parfait
Ingredients:
- 1 cup instant oats
- 2 cups water
- 1/2 cup + 2 tbsp coconut milk
- 2 tbsp water
- 1/4 cup + 1/4 cup dark chocolate chips
- 1 tsp vanilla
- 1/4 tsp instant coffee powder
- 1 pinch salt
Directions:
Dry roast the oats for a few minutes and let it cool completely. Once cool, grind it into a fine powder. Combine the oats powder with the rest of the ingredients (except the 1/4 cup chocolate chips and 2 tbsp coconut milk) in a pan and slowly bring it to a boil stirring continuously. Let it cook for a minute or two till the oats is cooked through.
To make the parfait, spoon some chocolate oatmeal into a small glass and place some chocolate chips on it. Top it with more oatmeal and one more layer of chocolate chips. Cover it with one last layer of oatmeal. Do this when your oatmeal is still hot as that will help the chocolate chips melt.
Finally drizzle the coconut milk and a couple of chocolate chips on top to garnish.
Serve hot.
