Brown Rice with Black Beans, Steamed Spinach, Grilled Mushrooms and Cherry Tomatoes

Rice N Beans Parfait:
Ingredients:
-Brown rice
- 1 can of cooked Black Beans (I just toss it in a pot, add pepper and salt, then wait for it to heat. Takes around 5-6 minutes).
-Baby Spinach
-1 Small tomatoe diced up

Directions:
 This is crazy easy to do.
1. Make sure rice and beans are cooked and seasoned.
2. Start layering the ingredients, like a parfait. I began with the black beans, then the rice. Next came the spinach and tomatoe, and another layer of rice and beans.

Brown rice, as well as black beans, have fiber. This helps to keep you full, regular, and overall healthy. If you are pressed for time, you can use instant brown rice. It is not as nutritious as regular rice, but if its a choice between that and fast food, I’d choose the rice. It’s brown and still has fiber, which automatically makes it a healthier choice.
I drizzled lite rancher dressing on top, oppose to sour cream. However, there are lighter versions of sour cream available at stores. I also recommend vegan sour cream-soy sour cream.
I used a 8 oz glass to create the parfait. I do this mainly for portion control.
