As I mentioned before, my house has recently been sparse when it comes to food. I was in desperate need of dinner, so I asked my boyfriend to pick me up a garden salad at a local Italian restaurant. He also picked me up some avocado, which I mashed up to make a sort of faux guacamole. The salad already had some carrot slices, cucumber slices and olives. I added the avocado mash, chopped a small tomato and added some canned beet slices I had on hand.

When it comes to making food, try to use what you have. A lot of recipes allow certain ingredients to be substituted. For example, if a recipe calls for milk, you can use nut or soy milk. If a recipe calls for cheese, try using soy or rice cheese instead.

I try to always keep frozen fruit and canned vegetables and beans on hand. Although it’s better to eat 100% fresh, having these things on hand helps sticking to a healthy diet. They’re quick, easy, and still packed with nutrients.
