Vanilla almond macadamia butter - the perfect last minute Christmas gift
This was amazing! The macadamias added a sweet creaminess that meant I had more than just a few licks of the bowl. Oops. I have justified everything this week with “It’s Christmas!” - I seem to forget that it is one day, not one month. Anyway…
You will need: 1 and a half cups raw/roasted almonds (preference), 1/2 cup raw macadamias, generous pinch of sea salt, splash of vanilla essence
Chuck all the ingredients into a good quality food processor and test your patience. Scrape the sides down periodically to ensure all the nuts are being adequately pulverised. They will look ground and hopeless and just like little crumbs for ages but if you wait, they will become a unified butter before your eyes and it will be delicious.
